Baking up a storm with Luv Health

This week we are featuring Lizzy Delaney who is the founder of Luv health LTD and our nutrition partner. Liz is a regular feature in our SLAM at Home Package and our members rave about her recipe ideas.

Lizzy is a health coach who specialises in helping women to feel empowered and in control around food. Lizzy works with women who have been stuck on the diet treadmill for years, women who have disordered eating habits and women who just want to feel healthier and more positive around food.

PEANUT BUTTER AND CHOCOLATE BANANA BREAD RECIPE

3 ripe bananas (the riper the better) 
1/2 cup self raising flour (I used gluten free) 
1 cup ground almonds 
2 flax eggs (2 tbsps ground flax seed and 5 tbsps water allow to soak for 10 minutes) or you can use 2 actual eggs
1/2 cup honey 
1/2 cup melted coconut oil or butter 
1 tsp baking powder 
1tsp vanilla essence
150g chocolate of choice (I used dark) chopped into small chunks
Pinch of salt 
A few big dollops of peanut butter to top the cake

Method:
Mash banana
Add all the wet ingredients: honey, flax egg, melted oil/butter, vanilla essence 
Combine thoroughly
Add all the dry ingredients apart from the chocolate chunks
If the mixture seems a little bit thick, add a splash of a milk of your choice (I used almond) 
Once combined, add the chocolate 
Pour into a lined loaf tin
Once in the tin, add a few dollops of peanut butter onto the top of the batter and swirl around
Bake for around 40-50 minutes at 180 degrees in a fan oven or until the knife comes out almost clean (it usually has some residue on because it is quite a moist cake)
Leave to cool 
Slice and enjoy
